- 1 box strawberry cake mix (plus ingredients listed on the box: usually oil, eggs, and water)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, mashed
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch mixed with 1 tbsp water
- Fresh strawberries for garnish
- Drizzle of white chocolate (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking dish well.
- Prepare the cake mix as directed on the box, whisking until smooth.
- Pour the batter into the greased baking dish and give it a gentle shake to spread evenly.
- In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Drop spoonfuls of the cream cheese mixture onto the cake batter, spacing them out.
- Gently swirl the cream cheese into the batter with a knife without over-mixing.
- Bake for 30-35 minutes, checking with a toothpick for doneness.
- While the cake bakes, combine mashed strawberries, granulated sugar, and lemon juice in a saucepan over medium heat. Stir until the sugar dissolves, then add the cornstarch mixture and simmer until thickened, about 5-7 minutes.
- Once the cake cools slightly, drizzle it with the strawberry glaze and garnish with fresh strawberries and optional white chocolate.
Notes
For the best results, use peak ripeness strawberries. Can substitute with raspberry or blueberry for variation.
