Ingredients

Instructions

  1. In a medium saucepan, combine the sliced strawberries and sugar over medium heat. Stir gently until the sugar dissolves.
  2. Allow the mixture to simmer for about 10 minutes, or until it thickens slightly and becomes syrupy.
  3. Remove from heat and let it cool completely.
  4. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
  5. Gently fold the cooled strawberry mixture into the whipped cream until just combined.
  6. Spoon the strawberry mixture into chilled bowls or parfait glasses and garnish with fresh mint leaves.
