- 1 1/2 cups sugar cookie dough
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Press 1 cup of sugar cookie dough into the bottom of a greased 9-inch springform pan to form the crust.
- In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add in the vanilla extract and the eggs, one at a time, mixing well after each addition.
- Gently stir in the sour cream, flour, and salt until just combined.
- Pour the cheesecake batter over the crust and smooth the top.
- Drop spoonfuls of the remaining sugar cookie dough onto the cheesecake batter.
- Bake for 40-45 minutes, or until the center is set but still has a slight jiggle.
- Allow to cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
For added indulgence, dust with powdered sugar or drizzle with caramel sauce before serving. Consider pairing with fresh berries or a scoop of vanilla ice cream.
