Instructions
1. Peel the sweet potatoes and carefully slice them into ½-inch thick rounds. For even cooking, try to keep the slices as uniform as possible.
2. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until each piece is well coated.
3. Preheat your oven to 400°F (200°C).
4. Line a baking sheet with parchment paper and arrange the seasoned sweet potato rounds in a single layer, ensuring they don’t overlap. Use two baking sheets if necessary to avoid overcrowding.
5. Roast for 20-25 minutes, flipping them halfway through. The sweet potatoes should be tender and slightly browned. You can test for doneness by piercing a round with a fork; it should go in easily.
6. Once roasted, remove the sweet potato rounds from the oven and let them cool for a few minutes. This prevents the feta from melting too quickly.
7. Sprinkle the crumbled feta cheese over the warm sweet potato rounds, followed by a drizzle of honey.
8. If desired, garnish with chopped fresh thyme and walnuts or pecans. For an extra layer of flavor, drizzle with balsamic glaze. Serve immediately while warm.

Sweet Potato Variety: While orange-fleshed sweet potatoes are preferred, white or purple varieties can also be used.
