A comforting taco rice bowl filled with spiced ground meat, sweet corn, and zesty tomatoes, all served over fluffy rice.

Ingredients

  • 1 cup rice
  • 1 lb ground chicken or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons taco seasoning
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions until light and fluffy.
  2. In a large skillet over medium heat, add oil and cook the diced onion until soft and translucent, about 3-5 minutes.
  3. Add in the ground chicken or turkey, breaking it up as it cooks until browned.
  4. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Mix well.
  5. Let the mixture simmer for 5-10 minutes until heated through.
  6. Serve the meat mixture over the cooked rice, topping with shredded cheese and fresh cilantro.

Notes

Feel free to customize with lime, guacamole, or sour cream for added flavor. Store leftovers in an airtight container for up to 4 days.
