Instructions
- In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Stir until smooth and glossy.
- Dissolve instant espresso powder in hot water and add to the mascarpone mixture, gently combining them.
- Fold in ladyfinger crumbs until well incorporated for a delightful texture.
- Chill the mixture in the refrigerator for about 15 minutes.
- Scoop out small amounts and roll into balls, then coat each in cocoa powder.
- Refrigerate rolled truffles for at least 10 minutes before serving.
Notes
For a deeper coffee flavor, use freshly brewed espresso instead of instant coffee. These truffles can be frozen for longer storage.
