  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • Powdered sugar for dusting
  • Optional: sprinkles or dried fruit for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the butter mixture, stirring until just combined.
  5. Roll the dough into small balls, about the size of a walnut, and place them on a parchment-lined baking sheet, spacing them a couple of inches apart.
  6. Flatten each ball with your palm and sprinkle the tops with colorful sprinkles or bits of dried fruit, if desired.
  7. Bake for 10-12 minutes, or until the edges turn lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.
