Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the butter mixture, stirring until just combined.
- Roll the dough into small balls, about the size of a walnut, and place them on a parchment-lined baking sheet, spacing them a couple of inches apart.
- Flatten each ball with your palm and sprinkle the tops with colorful sprinkles or bits of dried fruit, if desired.
- Bake for 10-12 minutes, or until the edges turn lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Dust with powdered sugar before serving.
