Ingredients
¾ cup lime juice
¼ cup packed mint leaves, plus extra for garnish
½ cup sugar
½ cup pineapple juice (as a substitute for white rum)
½ cup coconut water (as a substitute for coconut rum)
1 cup canned coconut milk
Sparkling water
Pomegranate arils
Instructions
1. In a large pitcher, muddle the mint leaves with the sugar and lime juice to release the flavors.
2. (Optional: Strain out the mint leaves for a smoother drink.)
3. Stir in the pineapple juice, coconut water, and canned coconut milk.
4. Fill four glasses halfway with ice, then pour the coconut mixture until each glass is about ¾ full.
5. Top each glass with sparkling water, garnish with a sprig of mint and pomegranate arils, and enjoy!
Notes
Use fresh lime juice and mint for the most vibrant flavor.
To make it sweeter, adjust the sugar or use a splash of simple syrup.
Chill all ingredients ahead of time to keep your drinks extra cool.
This recipe is alcohol-free, but you can add a splash of rum for a spiked version.
