- 6 large eggs
- ½ cup full-fat Greek yogurt (unsweetened, plain)
- 1 tablespoon baking powder (aluminum-free preferred)
- ¼ cup melted butter or coconut oil
- ¼ teaspoon salt
- ½ teaspoon xanthan gum or psyllium husk powder
- Optional: ½ cup finely ground almond flour
Instructions
- Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or grease it.
- In a large bowl, whisk together the eggs and yogurt until smooth.
- Add in the melted butter, baking powder, salt, and xanthan gum; if using almond flour, sprinkle it in now. Mix until well combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 35–45 minutes until golden and a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Allow bread to cool completely for best slicing results. Customize with herbs or cheese for added flavor.
