A hearty comfort food transforming traditional meatloaf into a delightful casserole with layers of flavor.

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup (divided)
  • 2 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tbsp chopped green onions or chives (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a large bowl, mix together the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and half the ketchup.
  3. Spread the meat mixture evenly in the baking dish and top with the remaining ketchup. Bake for 20-25 minutes.
  4. Spread mashed potatoes over the meatloaf layer, top with shredded cheese and crumbled bacon.
  5. Return to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
  6. Garnish with green onions or chives if desired, allow to cool slightly, then serve.

Notes

For a healthier option, use lean ground beef or mix in ground turkey. You can prepare it a day ahead and refrigerate until bake time.
