- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 1/2 cup ketchup (divided)
- 2 cups prepared mashed potatoes
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tbsp chopped green onions or chives (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- In a large bowl, mix together the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and half the ketchup.
- Spread the meat mixture evenly in the baking dish and top with the remaining ketchup. Bake for 20-25 minutes.
- Spread mashed potatoes over the meatloaf layer, top with shredded cheese and crumbled bacon.
- Return to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
- Garnish with green onions or chives if desired, allow to cool slightly, then serve.
Notes
For a healthier option, use lean ground beef or mix in ground turkey. You can prepare it a day ahead and refrigerate until bake time.
