Ingredients
Scale
- 3 lbs chuck roast
- 4 large onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup French onion soup
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 325°F (165°C).
- In a large skillet, heat olive oil over medium heat. Add the sliced onions, stirring occasionally, and cook until they are beautifully caramelized and golden brown, about 25-30 minutes.
- Season the chuck roast well with salt, pepper, thyme, and rosemary. In the same skillet, sear the roast on all sides until it forms a nice, crusty browning.
- In a large roasting pan, combine the caramelized onions, minced garlic, beef broth, and French onion soup, stirring gently to blend.
- Nestle the seared roast atop the onion mixture, allowing it to soak in those flavors.
- Cover the pan tightly with foil and bake for 3-4 hours, or until the meat is fork-tender.
- Remove from the oven and let it rest for a few minutes before slicing.
- Garnish with a sprinkle of fresh parsley and serve.
Notes
Patience is key when caramelizing onions for the best flavor. For extra depth, consider adding red wine after searing the roast.
