  • 1 pound fresh green beans
  • ½ cup chopped onion
  • 2 cups cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 ½ cups fried onion rings
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling salted water, blanch the green beans for about 5-7 minutes until tender-crisp. Drain and set aside.
  3. In a skillet over medium heat, sauté the chopped onions until soft and translucent, about 3-4 minutes.
  4. In a large mixing bowl, combine the cream of mushroom soup, sour cream, and shredded cheddar cheese. Stir until smooth, adding salt and pepper to taste.
  5. Gently fold in the blanched green beans and sautéed onions until evenly coated.
  6. Transfer the mixture to a greased baking dish and top with fried onion rings.
  7. Bake for 25-30 minutes until bubbly and golden.

Notes

Blanching the green beans before mixing ensures they stay vibrant and avoid becoming mushy during baking. For added flavor, sauté some minced garlic with the onions.
