  • 3 cups low-sodium vegetable broth
  • 3 tablespoons all-purpose flour
  • 3 tablespoons tomato paste
  • 1¼ teaspoons kosher salt
  • ¼ teaspoon black pepper
  • pounds plant-based beef-style chunks, cut into 1-inch pieces
  • 1½ cups Yukon gold potatoes, diced
  • 1½ cups carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, chopped
  • 4 ounces white mushrooms, quartered
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • ½ cup frozen peas, thawed
  • Olive-oil cooking spray or 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 375°F or 190°C.
  2. Whisk or blend the vegetable broth, flour, tomato paste, salt, and pepper until smooth.
  3. Heat a Dutch oven over medium-high heat, add cooking spray or oil, and brown the plant-based beef-style chunks in batches. Remove and set aside.
  4. Add the carrots, celery, and onion to the pot and cook for about 5 minutes.
  5. Return the browned plant-based chunks to the pot. Add potatoes, mushrooms, thyme, bay leaves, and the broth mixture.
  6. Cover and bake for 2½ hours, until the vegetables are tender.
  7. Remove the thyme and bay leaves.
  8. Stir in the peas and let stand for 1–2 minutes before serving.

Notes

Choose a sturdy plant-based beef-style product that browns well and holds up to a long bake. Browning before baking develops deeper flavor. Yukon gold potatoes hold their shape well in stew. Sweet potatoes or parsnips can replace some or all of the potatoes. Cornstarch can replace flour if a gluten-free thickener is needed. Add extra mushrooms, carrots, or celery for more vegetables. This recipe contains no alcohol and no pork.
