  • 1 pound boneless, skinless chicken breasts, 454 g
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of ½ lime
  • ½ cup dry quinoa, rinsed
  • 1 cup water
  • 1 cup chopped tomatoes
  • ¾ cup reduced-sodium pinto or black beans, drained and rinsed
  • 2 cups shredded lettuce
  • ¼ cup shredded reduced-fat cheddar cheese
  • 2 tablespoons roasted pumpkin seeds
  • Fresh cilantro
  • ¼ ripe avocado
  • 2 tablespoons plain Greek yogurt
  • 12 teaspoons fresh lime juice
  • 2 tablespoons chopped cilantro
  • 12 teaspoons milk or water
  • Pinch of salt

Instructions

  1. Cook the quinoa with the water and a pinch of salt according to package directions.
  2. Season the chicken with cumin, chili powder, garlic powder, salt, pepper, and lime juice.
  3. Heat the olive oil in a large nonstick skillet over medium-high heat and cook the chicken for 6–8 minutes, turning once, until fully cooked.
  4. Transfer the chicken to a plate, rest for 5 minutes, then slice.
  5. Mash the avocado with Greek yogurt, lime juice, chopped cilantro, and enough milk or water to make a creamy sauce; season with a pinch of salt.
  6. Divide the lettuce and quinoa between five bowls.
  7. Add the beans, tomatoes, sliced chicken, cheese, and pumpkin seeds to each bowl.
  8. Drizzle with avocado-lime sauce and finish with fresh cilantro.

Notes

Chicken breast keeps the bowl lean and high in protein. Brown rice can replace quinoa, although quinoa adds whole grains and plant-based protein. Black beans can replace pinto beans. Greek yogurt provides a lighter alternative to sour cream. Add corn, bell peppers, pico de gallo, or jalapeños if desired. For lower carbohydrates, replace the quinoa with cauliflower rice or extra lettuce. Cook chicken to an internal temperature of 165°F or 74°C.
