  • 1 tablespoon balsamic vinegar
  • 1/2 tablespoon extra-virgin olive oil
  • 2 garlic cloves, minced
  • 2 teaspoons dried or chopped basil
  • 1 teaspoon parsley
  • 3/4 teaspoon salt
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, cut into chunks
  • 1 cup asparagus, cut into pieces
  • 1 medium red onion, chopped
  • 1 cup cauliflower florets
  • 1 1/2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons basil
  • 1 teaspoon parsley
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or basil, optional
  • Lemon wedges, optional

Instructions

  1. Preheat the oven to 450°F (232°C) and line a large rimmed sheet pan with parchment paper if desired.
  2. In a large mixing bowl, toss the chicken with 1 tablespoon balsamic vinegar, 1/2 tablespoon olive oil, garlic, 2 teaspoons basil, 1 teaspoon parsley, and 3/4 teaspoon salt.
  3. In a separate bowl, toss the red bell pepper, zucchini, asparagus, red onion, and cauliflower with 1 1/2 tablespoons olive oil, 2 tablespoons balsamic vinegar, 2 teaspoons basil, 1 teaspoon parsley, 3/4 teaspoon salt, and 1/4 teaspoon black pepper.
  4. Spread the vegetables evenly over the prepared sheet pan and arrange the chicken pieces among them, leaving space between pieces.
  5. Roast for about 20 minutes, until the vegetables are tender and the chicken reaches an internal temperature of 165°F (74°C).
  6. Finish with fresh parsley or basil and serve with lemon wedges, if using.

Notes

Cut vegetables into similar-sized pieces so they roast evenly. Thin chicken breasts or cutlets cook most evenly with the vegetables. Chicken thighs can replace chicken breast but may require additional cooking time. Broccoli, Brussels sprouts, mushrooms, or green beans can replace some of the vegetables. Do not overcrowd the pan; vegetables roast better with space. Balsamic vinegar adds acidity and sweetness without an alcoholic ingredient. Serve alone for a lighter dinner or with brown rice, quinoa, or roasted potatoes.
