  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1½ teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime
  • 2 cups cooked brown or white rice
  • 1 can black beans, 15 ounces or 425 g, drained and rinsed
  • 2 cups shredded romaine lettuce
  • 1 cup pico de gallo
  • 1 cup corn
  • 1 small avocado, sliced
  • ¼ cup fresh cilantro
  • Lime wedges
  • ¾ cup plain Greek yogurt, 180 g
  • 1 tablespoon fresh lime juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • 12 tablespoons water

Instructions

  1. Season the chicken with olive oil, chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice, tossing to coat evenly.
  2. Heat a large skillet or grill pan over medium-high heat and cook the chicken for 5–7 minutes per side, until the center reaches 165°F or 74°C.
  3. Transfer the chicken to a cutting board, rest for 5 minutes, then slice.
  4. In a bowl, mix the Greek yogurt, lime juice, garlic powder, ground cumin, and salt, then whisk in 1–2 tablespoons water until a creamy, drizzly sauce forms.
  5. Divide the cooked rice, black beans, shredded romaine, corn, and pico de gallo among four serving bowls.
  6. Top each bowl with sliced chicken and avocado.
  7. Drizzle with the Greek-yogurt sauce and finish with fresh cilantro and lime wedges.

Notes

Chicken breast provides a lean, high-protein base. Brown rice, quinoa, or cauliflower rice can replace white rice. Add extra black beans for more fiber and plant protein. Greek yogurt adds protein while replacing heavier creamy sauces. For lower carbohydrates, use cauliflower rice or extra lettuce. Add jalapeños or hot sauce for extra heat. Lean ground turkey, lean beef, or steak can replace the chicken. Cook chicken to an internal temperature of 165°F or 74°C.
