Ingredients
- 1 cup pure pumpkin pure9e, about 240 g
- 1 cup plain Greek yogurt, about 240 g
- 2 large eggs
- 1 cup old-fashioned rolled oats, 100 g
- bd cup vanilla protein powder, about 60 g
- 2 teaspoons pumpkin pie spice
- 1bd teaspoons ground cinnamon
- 1 teaspoon baking powder
- bd teaspoon baking soda
- Pinch of salt
- bd cup dark chocolate chips, optional
Instructions
- Preheat the oven to 350b0F (177b0C). Prepare a 12-cup muffin pan with liners or cooking spray.
- Add the pumpkin pure9e, Greek yogurt, eggs, rolled oats, vanilla protein powder, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and a pinch of salt to a blender.
- Blend for about 45 seconds, until the batter is smooth.
- Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.
- Sprinkle the optional dark chocolate chips on top of the batter.
- Bake for 22d725 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
- Cool briefly in the pan, then transfer the muffins to a wire rack to finish cooling.
Notes
Use pure pumpkin pure9e, not pumpkin pie filling. Vanilla whey protein powder works especially well; different protein powders can change the texture. Plant-based protein powders may make the batter thicker; add 2d73 tablespoons water if needed. Do not fill muffin cups completely; muffins rise during baking. Chocolate chips are optional and increase calories and sugar. Chopped walnuts or pecans can be added for extra texture; Ambitious Kitchen also uses walnuts as an optional addition. For the best texture, allow muffins to cool before removing from the pan. Estimated nutrition per muffin without chocolate chips: 125 kcal, 10 g protein, 12 g carbs, 4 g fat, 3 g fiber, 4 g sugar.
