- 16 ounces cottage cheese, 454 g
- 1/2 cup low-sugar pizza or marinara sauce, 120 g
- 1 cup part-skim mozzarella cheese, shredded, 113 g
- 1/4 cup grated Parmesan cheese, 25 g
- 10–12 turkey pepperoni slices, chopped
- 1/4 cup sliced black olives
- 2 tablespoons finely diced bell pepper, optional
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon crushed red pepper flakes, optional
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh basil, optional
Instructions
- Preheat the oven to 350°F or 177°C.
- Mix the cottage cheese, pizza sauce, garlic powder, Italian seasoning, salt, and pepper in an oven-safe dish.
- Top with mozzarella, Parmesan, turkey pepperoni, olives, and optional bell pepper.
- Sprinkle with red pepper flakes if desired.
- Bake for 18–20 minutes, until hot and bubbly.
- Finish with fresh basil and serve immediately.
Notes
Choose a pizza or marinara sauce with little or no added sugar to keep carbohydrates lower. Turkey pepperoni provides the classic pizza flavor without pork. Cooked ground beef, ground turkey, or chicken can replace turkey pepperoni. Full-fat cottage cheese works well for a richer keto bowl. Blend the cottage cheese before assembling if you prefer a smoother texture. Mushrooms, spinach, bell peppers, jalapeños, and olives all work well as low-carb toppings. For a quick microwave version, heat the cottage-cheese mixture for 30 seconds, add the toppings, then microwave another 30–60 seconds until the cheese melts. Serve alone or with sliced mini bell peppers instead of crackers or bread.
