- 1 teaspoon of red pepper flakes or cayenne powder
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for the cast iron preparation
Instructions
- Let the steak reach room temperature and pat dry with paper towels. Season generously with salt, pepper, and minced garlic.
- Heat a cast iron skillet over high heat until smoking hot.
- Add a splash of avocado oil and carefully place the steak in the skillet, listening for the sizzle.
- Flip the steak after a few minutes and add in the European butter, minced garlic, and herbs, spooning the melted butter over the steak continuously.
- Aim for a medium-rare doneness at 130°F, testing the steak for a slight springiness.
- Let the steak rest for at least 5 minutes before slicing against the grain.
- Mix the softened butter with parsley, green onions, Dijon mustard, lemon juice, lemon zest, and spices until creamy.
- Top the sliced steak with a generous dollop of cowboy butter.
Notes
Use high-quality butter and fresh herbs for enhanced flavor. You can replace Dijon with whole grain mustard or add Worcestershire sauce for a unique twist.
