Ingredients

  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice

  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of red pepper flakes or cayenne powder
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for the cast iron preparation

Instructions

  1. Let the steak reach room temperature and pat dry with paper towels. Season generously with salt, pepper, and minced garlic.
  2. Heat a cast iron skillet over high heat until smoking hot.
  3. Add a splash of avocado oil and carefully place the steak in the skillet, listening for the sizzle.
  4. Flip the steak after a few minutes and add in the European butter, minced garlic, and herbs, spooning the melted butter over the steak continuously.
  5. Aim for a medium-rare doneness at 130°F, testing the steak for a slight springiness.
  6. Let the steak rest for at least 5 minutes before slicing against the grain.
  7. Mix the softened butter with parsley, green onions, Dijon mustard, lemon juice, lemon zest, and spices until creamy.
  8. Top the sliced steak with a generous dollop of cowboy butter.

Notes

Use high-quality butter and fresh herbs for enhanced flavor. You can replace Dijon with whole grain mustard or add Worcestershire sauce for a unique twist.
